Originally opened in 1885 as De Witte Zaal ("The White Hall"), the signature Michelin-starred restaurant at Anantara Grand Hotel Krasnapolsky Amsterdam - The White Room - is one of Amsterdam's oldest fine dining establishments. Its beautifully preserved interiors, designed by artist Auguste Jean-Baptiste Graux, feature elegant white-and-gold décor, frescoes depicting fantasy landscapes and seascapes, and original architectural details that create a museum-like atmosphere, making the dining experience as visually captivating as it is culinary.
At the heart of The White Room's success is Chef de Cuisine Tristan de Boer, whose philosophy draws inspiration from Amsterdam's history as a global trading hub while celebrating locally sourced Dutch ingredients. His two tasting menus showcase produce such as lemon geranium, magnolia flowers, and Kamperlam, blending international influences with contemporary techniques.
De Boer is particularly recognised for reinterpreting Indonesian, Thai, and Surinamese flavours into refined fine dining dishes without losing their cultural authenticity. Signature creations include langoustine served with lovage stock inspired by Surinamese crab soup, and a vegetarian dish featuring Dutch cèpe mushrooms enhanced with cacao, shiitake XO sauce, blackberries, and Champagne.
The restaurant's culinary experience is further elevated by Head Sommelier Frederico Figueiredo, who works closely with De Boer to create harmonious wine and non-alcoholic pairings. Figueiredo selects wines that complement the dishes while introducing guests to unique discoveries, and also crafts innovative alcohol-free beverages, many based on kombucha, using combinations such as pear with ginger and beetroot with watermelon. With experience at prestigious establishments including De Librije, Restaurant Eleven in Lisbon, and the Four Seasons Hotel Ritz Lisbon, he also oversees the wine programmes across the wider hotel.
