BAR NOMO: ONII’S NEW JAPANESE - INSPIRED COCKTAIL BAR

Located at 6 rue du Marché Saint-Honoré, right next to Bar Omi, is Bar Nomo: an intimate cocktail bar built around a mix of Japanese design, food, and cocktails reinterpreted through Japanese ingredients and techniques. Founder Arthur Cohen describes it as “the most Japanese of Parisian bars — and vice versa.”

The interiors and architecture of bar Nomo were conceived by Studio Tom Ducarouge, taking inspiration from Shiro Kuramata’s iconic 1988 Miss Blanche chair, known for its roses suspended inside transparent acrylic. This became the starting point for the restaurant’s “Flower Bar” concept, with floral references running throughout the entire space. Flowers can be found all around the bar, in all kinds of forms and materials: in the fabrics on the banquettes, or hidden in resin pieces by Atelier Roma. In bronze and ceramics by William Guillon, lighting inspired by Japanese kissaten cafés, or the fresh floral arrangements by Ko Hana.

Executive chef Yuji “Taku” Mikuriya created the menu with Kazuhisa Akaba as chef de cuisine. The experience begins with a selection of otsumami, including dishes like tsukemono, toro-ponzu monaka, shokupan with Échiré butter and caviar, and aged Wagyu cecina. The main ingredient, a choice of each guest, is prepared in different ways and combined with a freshly rolled temaki.

Led by Dimitri Barclais and Mathieu Zouhairi, the cocktail programme includes signature drinks such as Manhattan with shiitake, Margarita with yuzu kosho, Espresso Martini with white koji, Moscow Mule with Okinawan ginger, Gin & Tonic with geranium and sancha, and Caipirinha with Okinawan rum and red shiso. Each drink is built around precise techniques such as clarification, fat-washing, house infusions and diamond-cut ice, alongside carefully selected spirits and a strong Japanese influence.
