The kitchen is led by Juan D’Onofrio, who focus on flavour above everything else. Instead of theatrics or overbuilt plate, they have mastered the art of well-seasoned food cooked with fire, technique, and a unique point of view. Their influences move between Latin America, Europe, and Asia, but nothing feels like a it was overtly planned out — it’s simply what makes sense on the plate.
The tasting menu changes often, but keeps its signature language. Among highlights and delicacies can be found: pigeon prepared in stages, boar with trumpet mushrooms, sweetbread lifted by beurre blanc and anchovy — classic-sounding dishes that got a contemporary upgrade. “We believe in gastronomy free of all dogma,” D’Onofrio says, and this claim clearly manifested itself into every aspect of the restaurant.
The interior stays firmly rooted in the restaurant’s approach to dinning: natural materials, subtle lines, and nothing too decorative for decoration’s sake. It’s calm without feeling minimalistic or sterile.
