RYO BRINGS SILK ROAD CUISINE TO AMSTERDAM’S NDSM

Ryo is the newest addition to Amsterdam-Noord’s NDSM Werf, bringing a polished take on Asian dining to one of the city’s most dynamic areas. Set against the raw, industrial backdrop of the former shipyard, the restaurant balances refined flavours with a relaxed, contemporary atmosphere.

Inspired by the idea of the Silk Road, Ryo’s menu moves fluidly across Asia, blending familiar comfort dishes with more creative interpretations. The focus is on sharing: sushi at the bar, small plates designed to be passed around the table, and cocktails that encourage you to stay a little longer than planned. Whether for lunch, an early dinner or a late-night drink, the space feels approachable without losing its edge.

The Japanese kitchen is led by Chef Zau, whose background spans some of Amsterdam’s best-known seafood and sushi kitchens. His approach is precise yet playful, built on strong technique and an openness to unexpected flavour combinations. Sushi is central, but it’s far from the only highlight, with Asian sharing plates adding depth and variety to the experience.

The interior combines bamboo, wood and subtle Asian references with the rough character of the NDSM Werf. Inside, generous seating invites long evenings; outside, a waterfront terrace offers one of the area’s best views.

Named after the Japanese ryokan, Ryo aims to be a place of connection: casual, social and subtly seductive.
