SPECTRUM: A CELEBRATION OF DUTCH HERITAGE

Within the walls of the Waldorf Astoria Amsterdam lies Spectrum, led by Chef Sidney Schutte and restaurant manager Cas Kratz. The restaurant is renowned for its celebration of Dutch cuisine and heritage, an approach that has earned it two Michelin stars.

According to Chef Sidney, it is about honoring Dutch fishermen, farmers, and craftsmen, truly showcasing their talent, abilities, and the ingredients they cultivate with love and passion. On the tasting menu, guests may encounter dishes such as North Sea Crab, Red Mullet with meadowsweet, and Langoustine with lion's mane mushroom, a true runway to the finest products this land has to offer.

Yet, as always, there is a twist. For instance, the Sticky Rice adds a touch of Asian fusion, while the Amsterdam Blanche, a dessert featuring cannabis and pure chocolate, offers a playful highlight.
