The Bunker is the opposite: quieter, darker, and designed for the full tasting menu experience. The space mimics a Japanese shelter with the intention to remove any distractions and fully enjoy the moment.

The Bunker’s menu options allow the guests to either revisits the house signatures, thanks to Clásicos del Bunker or explore the seasonally tweaked and more experimental Evolution. No matter the menu choice, they both rely on product above everything else — sourced sustainably and traceably from the Ebro Delta, Alaska, Japan and Portugal.
