NAZKA: PERUVIAN SPIRIT IN THE HEART OF AMSTERDAM

words by NATALIE GAL

Tucked away in the vibrant De Pijp neighbourhood, NAZKA is a rare gem that brings the bold spirit of Peruvian cuisine to the Netherlands. Known for its refined take on this hard-to-find cuisine, this spot offers both à la carte options and a well-curated four-course menu, along with a standout vegetarian selection. The wine pairings are expertly chosen, alongside classic wine regions like Burgundy, the list includes unexpected yet excellent selections from places like Bolivia and Peru. While the cocktails—especially those built around pisco—are outstanding, and the stylish, inviting interior adds to the overall allure.

Peruvian cuisine is rather special in its history and culture, especially colonial influences. From colonial times up to the Second World War, classical Peruvian cuisine was sidelined and only Spanish flavours were preferred. These ancient recipes, plants are being constantly rediscovered and rethought.

Even within Peru, there is a great variety of traditions, such as Amazonian cuisine, which focuses on products of the rainforest and the Coastal cuisine, which focuses on the fish of the Pacific Ocean. Peruvian cuisine is truly exciting, irresistible and memorable. When we are tasting these meals we become part of this impressive history, one that transforms continuously.

At the helm of NAZKA’s kitchen is Chef Koosh Kothari, whose personal journey adds a distinct and innovative twist to the restaurant’s offerings. Born in India, raised in Peru, and trained at Central, voted the world’s best restaurant in 2023, Koosh brings a uniquely progressive perspective. His dishes reflect a seamless fusion of cultures, combining traditional Peruvian ingredients with Indian nuances and European style, resulting in a menu that is vibrant, creative, and deeply personal.

Founded by Raul Lansink, who proudly celebrates his Latin roots, NAZKA was born from a desire to showcase the depth and dynamism of Peruvian gastronomy. The restaurant embraces the history and heritage while daring to innovate.

NAZKA’s culinary narrative mirrors Peru’s rich history: a melting pot shaped by centuries of cultural exchange. Peru was one of the six cradles of civilisation in the ancient world, affected by African, Spanish, Japanese, Chinese, and indigenous influences. And this variety of civilisations appears in every dish.
