A MODERN ASIAN FUSION EXPERIENCE AT UMAMI BY HAN
During Dutch Design Week in Eindhoven, we had the pleasure of dining at Umami by Han, a restaurant that embodies the philosophy of social dining through its Modern Asian Fusion cuisine. With locations across the Netherlands — including Amsterdam — Umami by Han offers a refined yet playful approach to taste, where every dish is designed to be shared and savored together.

Our evening unfolded as a flavorful journey through three courses. We started with the Umami Duck, a tender duck breast complemented by cucumber, seaweed, and shallot vinaigrette, and the Ceviche Seabass, beautifully fresh with passionfruit and avocado cream. The second course brought comforting depth with Ginger Chicken, crisp on the outside and tender within, balanced by ginger and truffle sauces, alongside Steamed Scallops with glass noodles and a fragrant soy dressing. The Veggie Gyoza with kimchi and chili mayo was a spicy, satisfying touch.
For the final course, the Black Cod in crab and tomato sauce stood out for its delicate texture and subtle umami layers, while the Eggplant Beef offered a hearty, aromatic contrast. The Spicy Portobello Mushroom was a vibrant vegetarian highlight, rich in XO beetroot and red pepper.
Dessert was a feast for the senses — the Chocolate Mousse with blood orange and raspberry-vanilla ice cream brought a silky, tangy finale, and the Matcha Bubble Tea dessert was a playful mix of textures and flavors, blending warm fried buns, matcha ice cream, and brown sugar sauce.
From start to finish, Umami by Han delivered an immersive dining experience — a harmonious fusion of flavor, texture, and presentation. Whether in Eindhoven or Amsterdam, this spot is a true gem for modern Asian fusion lovers. Honestly, run there.
