Opening on 30 October at Jumeirah Marsa Al Arab, 1206 takes a quieter approach to Dubai contemporary dining. Named after a once-hidden room on the property’s fourth level, the restaurant pairs uninterrupted views from Jumeirah Burj Al Arab towards Burj Khalifa with an ingredient-led philosophy centred on seasonality, provenance and restraint.
At the helm is Head Chef Stephanie Haywood, whose experience spans Michelin-starred kitchens across the UK, Scandinavia and the GCC. Rooted in British cooking and shaped by French, Mediterranean and Scandinavian influences, her menu places vegetables alongside protein with equal importance. Fermentation, curing, slow cooking and open-fire techniques are used with precision, allowing the ingredients themselves to remain at the centre of each dish.
Throughout the experience, the starters and desserts stood out most for me, both showcasing the restaurant’s balance between creativity and simplicity. The menu feels considered rather than overly complicated, with each element given a clear purpose.
That philosophy extends beyond the plate. Whole-ingredient cooking is central to 1206, while herbs and botanicals from the terrace garden make their way into dishes and cocktails, creating a continuous connection between kitchen, bar and garden.
Designed by AvroKO, the interiors echo this restraint through warm earthy tones, carved marble, handcrafted textures and references to Levantine coastal architecture.
As the final restaurant completing Jumeirah Marsa Al Arab’s culinary collection, 1206 offers something refreshingly considered: thoughtful cooking, beautiful surroundings and an experience that feels intimate despite its spectacular Dubai setting.
