At Henrique Sá Pessoa, the chef’s latest opening leans into something more personal. Positioned as his most direct project to date, the restaurant moves away from the rigidity often associated with fine dining, opting instead for a format that feels more relaxed, without losing precision.
The space itself is intimate, built around a central open kitchen that naturally draws attention. With just 30 seats — plus a small counter overlooking the pass — the setup prioritises intimacy, allowing the experience to feel natural rather than formal.
On the menu, Sá Pessoa’s signature style remains recognisable, but with a looser structure. Three tasting menus — ranging from seafood-led to more retrospective selections of his defining dishes — offer different ways into the kitchen, alongside an à la carte option that adds flexibility.
What comes through is a sense of clarity. The cooking doesn’t aim to reinvent his language entirely, but to refine it — balancing familiarity with a more contemporary, adaptable approach. There’s an ease to how the menu is constructed, allowing guests to engage with the food on their own terms rather than being strictly guided through a set narrative. The wine programme has a strong focus on Portuguese producers supported by a wider international selection, reinforcing the restaurant’s overall sense of direction.
Rather than trying to redefine his cooking, Sá Pessoa focuses on refining it — resulting in a restaurant that feels confident, considered, and distinctly his own.
