Opened in September 2025, 1 Hotel Copenhagen marks the first continental European location for 1 Hotels, the mission-driven luxury lifestyle brand founded by Barry Sternlicht. Developed through a transformative reimagining of the historic Skt. Petri hotel, the 252-room and 30-suite property merges Copenhagen’s celebrated climate leadership with biophilic design, holistic well-being, and authentic Danish craftsmanship.
The hotel's design focuses heavily on environmental integration. The atrium features rising trees, pocket gardens, and outdoor terraces blooming with wildflowers and seasonal herbs, alongside a striking living wall on the façade and an urban "bee hotel." Guest spaces utilize organic textures, natural light, reclaimed wood, sustainably sourced bedding, and eco-friendly St. Leo marble paint and Clayworks plasters. In-room perks include yoga mats, Bamford organic bath products, and a minibar stocked with low-impact Danish snacks and spirits. A 24/7 Field House Gym offers fitness classes, with a full Bamford Wellness Spa planned as an upcoming addition to the property.
The culinary program is helmed by Green Michelin-starred Chef Chantelle Nicholson, focusing on seasonal, low-waste dining. PÆRE offers an all-day dining experience, and evolves from bar to table, a seamless, social dining experience shaped by a coastal Italian kitchen. Energy flows easily between spaces, where sound, light, and conversation set the rhythm of the evening. Plates arrive in waves, from antipasti and boards to pasta and grill, designed for sharing and stretching time at the table. Unfussy and convivial, it's a place defined less by structure and more by connection.
The property heavily integrates local art, featuring installations by Sara Martinsen and Tine Otto that repurpose discarded materials, and a focal piece by Rhoda Ting and Mikkel Bojesen exploring human-ecological connections through foraged fungi and moss.
Operating on a hyper-sustainable blueprint, the hotel employs district heating (powered by waste and wood chips), smart occupancy sensors, and repurposed furniture from the original building. Single-use items are heavily reduced through wooden keycards and chalkboard writing pads. Socially, the hotel partners with ByBi for urban beekeeping, Koji Copenhagen for upcycling food waste, and JunkFood—a charity providing hot meals to the homeless—via its "1 Less Thing" guest clothing donation program.
