KOAN: A CULINARY JOURNEY BETWEEN TWO WORLDS

Kristian Baumann, chef patron of KOAN in Copenhagen, has created a cuisine that reflects his unique story of heritage, identity, and discovery. Born in South Korea and adopted by Danish parents, Kristian grew up connected to both cultures that have formed the foundation of his cooking.

His early career took him through some of Denmark’s most influential kitchens, including experiences at Noma, Manfreds, and Relæ, where he got familiar with Nordic ingredients, seasonality, and culinary craftsmanship. Over time, he began searching for a more personal expression of food which connected his professional journey with his Korean roots. KOAN, which opened in Copenhagen in 2023, became the realisation of that vision. The restaurant combines the precision and simplicity of Danish cuisine with the techniques, flavours, and traditions of Korea. Each dish reflects years of research and a desire to celebrate the connection between his two cultures.

Within weeks of opening, KOAN was awarded two Michelin stars and gained international recognition for its innovative approach. Beyond the cuisine, the restaurant represents Kristian’s values of sustainability, creativity, and creating a balanced environment for both guests and his team.
